Food is full of memories. Be it your mums rajma chawal on a Sunday afternoon, or hot pakoras in monsoon, familiar dishes make you feel good and takes you back to your childhood. However what about these old classics but with some fun modern twist? Everybody in the modern world is being a cook in the kitchen. The fusion flavours to healthier choices, the entire world has a lot to see, without abandoning the same dishes that we grew up loving.

As I will demonstrate in this article, you can make a difference from a few traditional Indian and world recipes--something new, something exciting, but still the same.

  1. Khichdi Goes Global



  Khichi is the comfort food of all the comfort foods.      Simple, soothing, and quick. But then what about        adding a worldly touch?

  The Twist:To prepare a Mexican-style khichdi add

  •  Red beans (rajma)
  •  Corn
  • Bell peppers
  • A pinch of cumin and paprika
 
Serve with avocado slices and a squeeze of lime.
Well, honestly, I did it only once because I was bored, and it became a home dish a couple of times, as I just needed something hearty but different.

  1. Masala Grilled Cheese Sandwich


Everybody loves a cheese toastie, right? Crunchy outside, melty inside. But let's desi-fy it a bit.

The Twist
Add a layer of:

  • Green chutney
  • Sliced onions
  • Chaat masala mixed with boiled and mashed aloo.

Roast it with a little Amul cheese and bang--chaat sandwich.
Delicious as a snack at night, as a school pack, or when you have to work late and are hungry.

  1. Ramen Meets Maggi

Maggi is a national emotion. But let's say you're in the mood for something fancier--like ramen. Can we combine both? Definitely.

The Twist:

  • Cook Maggi as usual (keep the masala packet)
  • Add soy sauce, chilli oil, and a bit of garlic
  • Toss in a boiled egg, some sauteed veggies, and spring onions

It turns into a full meal, and it looks fancy too--even though it only took 10-15 minutes.

True story: I made this for a friend who was feeling low, and she said it was the best comfort food she'd had in weeks.
